Although Italy is the largest consumer of seafood in Europe, API stresses that current domestic output is not sufficient to close the gap with imports. In Friuli Venezia Giulia, a leading region in trout farming, Friuli smoked trout stands out as a territorial excellence: in Udine, during Friuli Doc, guided tastings sold out, proving that quality and local identity can make a difference.

Fabris points out that trout production in Italy amounts to about 30,000 tons per year, a significant figure but still limited compared to the sector’s potential. For API, it is crucial that operators and institutions support initiatives to enhance local products, simplify regulations, and encourage investments.

The association also calls on consumers: read labels carefully, ask about provenance in restaurants, and choose local products whenever possible. These are actions that can help reshape the market structure.
